Avena sativa, or common oats, has been cultivated for over 5,000 years and thrives in cooler, damp climates. When harvested at the milky stage(a brief window when the seed releases a white sap), the fresh “milky oats” are prized for tinctures, while the stems - known as oatstraw - a re dried for soothing teas and infusions.
